There’s no cooking involved in this light and healthy dish, just some chopping and adding ingredients to taste. For me this is an excellent meal when it’s already hot outside and I don’t feel like heating things up by using the oven or the stove. It’s not the cheapest meal around, but sometimes you just have to give yourself a little treat.
The cucumber salad I made a couple of weeks ago kind of reminded me of my two summers spent in Taiwan, but this salad really comes close. Except for a couple of tweaks, it tastes similar to the cucumbers we used to order as a refreshing side dish. I made this salad as a side dish with the most amazing ribs ever, so it didn’t get a lot of attention. But this salad doesn’t need to be the center of attention, it’s very refreshing: the salad helps you to wake up your taste buds and it will cool you off if you’re eating spicy food.
I’m trying to stick with my salad plans and made this new one. The picture in the book reminded me of a cucumber pickle which I liked to eat when I spent two summers in Taiwan. It doesn’t taste the same, but is still tasty. Don’t make the same mistake I made and try to make this salad into a complete lunch. Even though all these fantastic flavours are being added to the cucumber, you’ll still end up with a salad that mostly consists of cucumber. It does make a perfect side dish.
