Carrot Cake

Eating healthy and cutting back on sugar is going pretty well, most of the time. But sometimes I just can’t resist and I give in to the craving and indulge in something not-so-healthy. And when I do, I do it right. Like this ridiculously scrumptious moist and sweet carrot cake topped with a luscious cream cheese frosting.

I always thought frosting was overrated, it would just be an extra trip to the gym without actually adding something to the cake. But boy, was I wrong. This fresh and slightly tangy frosting turns a decent cake into one big party in your mouth. Note to self: make that extra trip to the gym and get yourself another slice of this cake.

When the carrots were roasting in the oven and the scent of garlic mixed with cumin and coriander spread through the house, when the oranges were segmented and when the slices of perfectly ripe avocado were mixed with a little bit of olive oil, orange juice and salt, I had my hopes set high.

But I was still overwhelmed when I took my first bite. The combination of different spices, flavors, textures and temperatures took me completely by surprise and knocked me off my feet.

I ate this salad with a friend, but not a single word was spoken during lunch, we were too busy enjoying the salad and going for seconds and thirds.

Quinoa Salad Duck Breast

After eating ridiculous amounts of almond croissants, chocolate croissants, pastries and French fries that aren’t even French for 10 days straight, it was time to get my ass back to the gym and eat healthy, wholesome food again. On the contrary of what you might think when you take a look at the latest recipes on this blog  – ice cream, meatloaf grilled cheese sandwich and brownie cookies – I try to eat fairly healthy. It doesn’t necessarily have to be super lean and I’m not able to cut out sugar completely, but I do like to know what is in my food, I like my food to be nutritious and I like to eat whatever I’m craving at that moment mindfully.

This was the first time I had quinoa – I’m way behind on trying out the hip health foods, at least I’ve been eating chia seeds daily since months already – and I really liked it. It was also the first time that I cooked duck and even though I cooked it a little bit too long, the meat was still very tender and the skin was as crispy as it should. Two foods I had never cooked before in one recipe.. living on the edge.

For almost seventeen summers straight, from when I was one year old, my family went camping in France. After finishing high school I started going on my own trips with friends, but this summer I joined my parents for one more trip. It was nice to see that after six years I was still able to set up a tent, but I have to admit that it was way more fun to go camping when I was a kid. It did enjoy spending time with my parents, visiting new places and eating shitloads of croissants. Thanks mom and dad for taking me with you.

We went to the northern part of France, close to the French-German border, and visited cities like Metz, Nancy and Strasbourg.
